Preheat the oven to 375º. Beat the egg and 1/2 cup of cheese together in a bowl. (Save the other half!) Make sure the quinoa is warm, not hot, then add it to the mixture, stirring until well blended. Spray an 8-9 inch pie plate with non-stick spray, or oil or butter the pan. Pour the quinoa mixture into the pan. Using a piece of wax paper, baking parchment, or plastic, gently press the quinoa into place, so that it’s flat on the bottom of the pan and ascends up the sides of the pan.
