Oven Polenta with Roasted Veggies

Instructions
  1. Preheat oven to 325ยบ. Toss the veggies and chopped fresh herbs in a large bowl with the olive oil, adding salt and pepper to taste. Spread the veggies on a parchment-lined baking sheet. Place on top rack of oven.

  2. Heat the broth and water to a boil, then whisk in the butter until melted. Add a pinch of salt if desired. Pour polenta into liquid while whisking constantly. Immediately cover pot, and place on lower rack in the oven. Bake 30 minutes. Remove polenta from oven, whisking, then set it on the stove over the lowest possible heat.

  3. Increase oven temp as high as it will go, but not to broil. Continue to roast for 5-10 minutes.

  4. While veggies have their final roast, whisk Parmesan into polenta, then cover and keep over low heat until veggies are done.

  5. Sprinkle veggies with balsamic and stir. Pour polenta on a plate, top with veggies, and top with fresh basil. Add generous pepper if desired.
