Customize your meatballs, and use the same proportions to make a meatloaf in your favorite flavors, and using the veggies and herbs that you have on hand.

Instructions
  1. Preheat the oven: 400º for meatballs, 375º for meatloaf. Assemble your ingredients. In a medium-large bowl, place the grains and the soaking liquid.
  2. While the grains soak, chop the veggies, onions, and herbs. Add them to the soaked crumbs and mix. Add the egg, salt, and, if using, thicker sauce and combine.
  3. Add the ground meat. Either with a fork or your hands, gently combine the ingredients. Shape into meatballs and place on parchment, or, if making a meatloaf, place in a loaf pan. Bake the meatballs for 15-20 minutes. If you are adding meatballs to soak in a sauce, realize that they will continue to gently cook while they are in the sauce. If making meatloaf, bake 50 minutes. Alternatively, you can place the mixture in a crock pot and cook on medium for 2-2 1/2 hours.
