Cauliflower Pizza Crust
Super easy cauliflower pizza crust goes together quickly, and can be made gluten- and dairy-free.

  1. Preheat oven to 400º. Cut cauliflower off of stem, then into uniform cubes, 1-2 inches. Pulse in food processor until all cauliflower is crumbled and roughly rice-sized.

  2. Toss crumbled cauliflower in a bowl with oil and spices, then spread evenly on a parchment lined baking sheet. Roast 10 minutes, then stir, and roast another 10 minutes.

  3. Mix cauliflower in bowl with egg, panko or substitute, and nutritional yeast or cheese. Add salt and pepper to taste. Turn cauliflower mixture back onto parchment lined sheet. Top with another sheet of parchment or waxed paper, then press gently to form a uniform circle, approximately 11-12 inches in diameter.

  4. Bake 14-18 minutes. Top with the toppings of your choice, and rebake if desired—for instance, if you use cheese and you want it to melt. The crust will cut easily, but lift it fairly carefully with a spatula onto a plate; it’s not sturdy like pizza. For least messy results, eat with a knife and fork.
